Summertime Sangria

The nights are getting cooler, and the sun is going down earlier, which are sure signs that summer is soon to be over. As excited as I am for everything fall (especially anything that has to do with pumpkin!), I am really trying to savor the last few weeks of summer that are left.

One of my favorite things to do on a summer night is to sit out on our patio with a nice glass bottle of wine. There really is nothing more peaceful than sipping on a glass of wine while you listen to the crickets and nightlife around you.

Since my refrigerator is bursting with fresh fruit right now, I decided it was only fitting to change up my usual wine routine and make some sangria. You can really use any fruit that you desire or have available. It is a great way to use up any extra fruit shoved to the back of the fridge. The addition of the Sprite gives it a little extra bubbly, and helps bring out some of the flavors of the fruit. In my opinion, sangria is the perfect summer cocktail. (Plus it is a great way to get in a serving of fruit 😉 )

Sparkling Summery Sangria
Yields: 4-6 servings

Ingredients:
1 bottle of your favorite red wine
1 can of Sprite or 7-up
1/2 of an orange, sliced into thin rings
1 lime, sliced into thin rings
5 or 6 strawberries, hulled and cut into quarters
Half an apple, cut into chunks
1/4 cup fresh blueberries

Directions:
Pour the wine and the Sprite into a large pitcher, then add the fruit. Chill for at
least 2 hours before serving.
