Creamy Taco Mac

People who write food blogs, tend to also read food blogs, and therefore popular recipes spread like wild-fire across the food blog community. Before you know it, you’ve seen a cake pop and oreo truffle on every food blog. About a year or so, I started seeing this creamy taco mac recipe creep up everywhere. Soon enough, almost every blog in my google reader had posted about their version of this quick and easy dinner. I’m not sure why it took me so long to make, but I finally got around to trying it this week, and I can now understand its popularity.

Creamy taco mac is like macaroni and cheese on steroids. It’s beefed up (literally), with ground beef and veggies, and given a mexican flair with taco seasoning.  It’s like a homemade, healthier version of Hamburger Helper, with no weird ingredients or preservatives with names that you can’t pronounce. Considering that my husband single-handedly kept Hamburger Helper in business during his college years, he was a big fan of this meal. This recipe makes a lot for just two people, but don’t worry, you’ll be happy you have leftovers. 🙂

Creamy Taco Mac
Yields: 4-6 servings

1 lb ground beef or turkey
8 oz dry pasta + 1 cup reserved pasta water
1 small onion, diced
1 clove of garlic, minced
1/2 green pepper, diced
1 can (14.5 oz) petite diced tomatoes
4 Tbsp mild taco seasoning
3 oz cream cheese
1/2 cup sour cream (or greek yogurt)
1/4 cup cheddar cheese, shredded
Salt and pepper to taste

Bring a large pot of salted water to boil and cook pasta per directions. Reserve one cup of pasta water.

Over medium heat, brown the ground beef just until cooked all the way through. Add the onion and cook until the beef is cooked throughly. Add the garlic and peppers and cook for an additional 30 seconds. Add the taco seasoning and diced tomatoes, then allow to simmer over low heat for 5 minutes.

Add cooked pasta, reserved water, cream cheese, sour cream and cheddar cheese. Stir until well combined and the cheese is melted. Simmer over low-heat for 2-3 minutes. Season with salt and pepper to taste.
