Let me set the scene for you. It’s a Friday night, you’re home relaxing with your hubby after a long, busy week. You’re craving something sweet, and after perusing your Pinterest boards for a while, you finally decide on making chocolate chip cookie sandwiches, filled with a thick, rich buttercream. Sounds pretty amazing, huh? You start the dough in the mixer, and go to reach for your powdered sugar only to find that you only have a few teaspoons left. UGH. Your pajamas are already on, so there’s no running to store (because ya know, that would require you to put on a bra). What’s a girl to do?
Make your own powdered sugar, of course! Even though I’ve made my own brown sugar before, it never occurred to me to make my own powdered sugar until my recent powdered sugar crisis. It’s ridiculously easy, and honestly takes less time than it would to put shoes on to go to the store. You don’t need fancy equipment to make super fine, fluffy sugar – just a regular ‘ol blender will do. I honestly was skeptical at first, but was amazed that after just 30 seconds in the blender, I was left with beautiful powdered sugar.
How To: Make Powdered Sugar
Yields: 1 cup of granulated sugar = just over 1 cup of powdered sugar
Ingredients:
1 cup of granulated sugar
1 tablespoon cornstarch
Directions:
Place the granulated sugar and cornstarch in a blender, and blend for 30 seconds, or until the sugar has a powdered consistency.
Store in an airtight container.

I have been wanting to do this, but haven’t yet. A few months ago, it took me going to 3 stores to get powdered sugar, because every place was out. It was insane! I finally found it, or I would have been making my own. Guess it would have just been easier to do that from the start 🙂
