With three weeks into the new year, I am happy to say I am still on track with my resolution to eat healthier and lose weight. I’ve been working out more regularly, tracking my calories on a daily basis, and as a result I’ve already lost about 7 pounds. With that being said, the one thing I love about tracking my calories is that I don’t necessarily have to deprive myself of my favorite foods. It’s all about moderation. If I know that if I’m planning on going our to dinner, or I just can’t kick that craving for a candy bar…I know I can have it, I just need to plan for it!
These chocolate peanut butter pretzel balls are a prefect solution to satisfy my sweet tooth on the days that I am craving something chocolate. And let’s be serious, this happens on a daily basis. Each peanut butter ball clocks in at about 100 calories, so you can have one (or two), without completely ruining your day. They taste very similar to buckeyes, but the pretzels give them a nice crunch and make them lower in calories than buckeyes. Be careful though…they are highly addicting!
Chocolate Peanut Butter Pretzel Balls
Yields: 18 balls
1 1/2 cups pretzels
1/2 cup creamy peanut butter
1 Tbsp butter, softened
2 Tbsp brown sugar
3 Tbsp powdered sugar
1 cup semi-sweet chocolate chips
Crush pretzels into small bits using a large ziplock bag or a food processor.
In a small bowl, stir together the peanut butter, butter, brown sugar, and powdered sugar until well combined. Take a large plate and cover it with waxed paper.
Scoop about a teaspoon of the peanut butter pretzel mixture into your hand and gently pat it into a ball with your fingertips. Place the peanut butter balls onto the prepared plate. When you have finished rolling all the balls, place the plate into the refrigerator to chill for at least 30 minutes.
After the peanut butter balls have chilled, prepare your chocolate. Pour the chocolate chips into a small microwaveable bowl, microwave for 30 seconds and stir. If needed, microwave for another 10 seconds and stir again. Continue until the chips are completely melted and the chocolate is nice and smooth.
Place one peanut butter ball into the melted chocolate and gently roll it around with a fork until completely coated. Remove from the bowl with the fork and place back on the waxed paper plate. Repeat for all other balls. Refrigerator and chill another 30 minutes.
