Cranberry White Chocolate Oatmeal Cookies

I am a huge fan of white chocolate, and will gladly choose white chocolate over milk or dark chocolate any day. Therefore, when I received this recipe as part of a recipe swap that I participated in, I knew I would love them. My first thought when I took a bite of these cookies was that they taste like Christmas! Seriously. The oatmeal gives the cookies a chewy texture, while the sweet white chocolate balances the tartness of the cranberries. The result?  A fabulous kicked-up oatmeal cookie, that would be the perfect addition to your holiday cookie tray.

Cranberry White Chocolate Oatmeal Cookies
Yields: About 3 dozen

Ingredients:
2/3 cup butter, softened
2/3 cup firmly packed brown sugar
2 large eggs
1 1/2 cups old fashioned oats
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 (6 oz) package dried cranberries
2/3 c white chocolate chips

Directions:
Preheat oven to 375 degrees F.

Using an electric mixer, beat butter and sugar together in a mixing bowl until light and fluffy. Add eggs and mix well.

Combine oats, flour, baking soda, and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in dried cranberries and white chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheet.

Bake for 10 to 12 minutes or until golden brown. Cool on wire rack.
