Fiesta Casserole

Casseroles tend to get a bad wrap in the foodie world. Perhaps it is because they are usually laden with processed, sodium filled ingredients like “cream of crap” soup, and usually turn out to be bland, flavorless mush. Well, I am here to tell you that you can make a casserole that is not only flavorful, but healthy! Enter fiesta casserole.

Fiesta casserole takes all of the components of a good Mexican meal and combines them all in one dish. The combination of textures and flavors is fabulous – The salsa flavor is pretty prominent, so be sure to pick a salsa you love. If you want to make this recipe even cleaner, you could substitute diced tomatoes and peppers for the salsa.

One of favorite things about this meal is that you only have to dirty one dish! You can mix all the ingredients right in the baking pan, then pop it in the oven. This is a great weeknight meal when you need something quick and easy, but healthy!

Fiesta Casserole
Yields: 6-8 servings

3 cups low-sodium chicken broth
2 cups instant brown rice
2 cups corn
1 (15.5 oz) can black beans, drained and rinsed
1 1/2 cups salsa
1 tablespoon hot sauce
3 cups shredded, cooked chicken
8 ounces sharp cheddar cheese (about 2 cups)
Lime wedges, for serving

Preheat the oven to 450 degrees. In a 9×13 inch baking dish, stir together the broth, rice, corn, black beans, salsa and hot sauce. Bake for 15-20 minute, or until the rice is tender.

Remove the casserole from the oven, and add the chicken. Sprinkle the cheddar cheese evenly over the top. Continue to bake an additional 8-12 minutes, or until the cheese is melted. Serve with lime wedges.
