Confetti Corn

Summer is now in full swing, which means we fire up our grill almost every night for dinner. Corn is a natural accompaniment to almost all BBQ dishes, but when your cooking for a large group of people, it’s not always practical to make a ton of corn on the cobb. Enter confetti corn. You can quickly make this on the stove top (or even the microwave) and can easily double or triple to recipe to serve lots of people. I love all the bright colors of the veggies, and the spicy peppers really accent the sweetness of the corn well. This is the perfect side dish to your summer BBQ.

Confetti Corn
Yields: 4-6 servings

2 tablespoons olive oil
1/2 large red bell pepper, diced
2 tablespoons unsalted butter
4 cups corn (fresh or frozen)
4 stalks of green onion, chopped
1 1/2 teaspoons salt
1 teaspoon black pepper

In a large saute pan, heat the olive oil over medium heat. Saute the bell pepper for 2 minutes, until tender. Add the butter and allow to melt.

Add the corn, green onions, salt and pepper and cook for 5-7 minutes. Serve hot.
