Strawberry Banana Puff Pastry Donuts

Donuts seem to be all the rage in the blogging world lately. I keep seeing all sorts of yummy donut recipes, but without a donut pan, what’s a girl to do? I know…I could go buy a donut pan, but I haven’t got around to it. Then I came across this recipe, and knew I could make awesome donuts at home, without any special equipment. Plus, since they have fruit inside they’re healthy, right? 😉

This recipe truly cannot get any easier. Take some puff pastry circles, fill it with your choice of fruit, pinch them closed and bake until their golden brown. Since I have just bought some gorgeous local strawberries, I chose to stuff mine with a banana slice and a small strawberry. They are so delicious, and so easy to make.

Strawberry Banana Puff Pastry Donuts
Yields: About 12 donuts

1 egg
1 Tablespoon water
1 package puff pastry sheets, thawed
Cut-up fruit, such as strawberries, bananas, raspberries, blueberries, etc.
Granulated sugar

Lemon glaze:
1/4 cup lemon juice
1 cup confectioners’ sugar

Preheat the oven to 400 degrees F. Unfold the pastry sheets onto a lightly floured surface. Using a biscuit cutter, cut the pastry sheet into circles. Place half of the circles onto a parchment lined baking sheet.

Take some of your fruit, and top each circle with the fruit and a pinch of sugar. Place another pastry circle on top of the fruit, and use a fork to crimp and seal the edges. Use the fork to puncture the top of the donut to allow for air holes.

In a small bowl, whisk together the egg and water to make an egg wash. Using a pastry brunch, gently brush the donut with the egg wash. Bake the donuts for 15 minutes, or until the bottoms are golden brown.

To make the lemon glaze, whisk together the lemon juice and confectioner’s sugar. Once the donuts cool, drizzle the donuts with the glaze. Serve immediately and enjoy!
