Chewy Chocolate Chip Granola Bars

My job is pretty fast paced, and very rarely do I get more than 5 minutes to sit down and eat. Going without any food for my entire 12 hour shift is obviously not a good idea, so I always fill my work bag with tons of quick, healthy snacks that I can eat as I race around the hospital. These granola bars fit the bill perfectly. They are tasty, filling and are just sweet enough to satisfy my enormous sweet tooth. Plus, they taste better and are much healthier than store-bought granola bars. This recipe is so versatile, that you can really add any dried fruits, nuts, or chocolate chips that you have in your pantry. As long as you have a good balance of sticky ingredients (honey, butter, peanut butter, etc.) vs. dry ingredients (oatmeal, granola, cereal, nuts, dried fruits, etc.) you can make fabulous granola bars.

Chewy Chocolate Chip Granola Bars
Yields: About 12 granola bars

2 cups quick oats
1 cup rice krispies (I used lightly crushed Chex)
1/2 cup mini chocolate chips
1/2 cup (1 stick) butter, softened
1/2 tsp vanilla
1/4 cup honey
1/3 cup peanut butter
1/4 cup brown sugar

Pre-heat oven to 350 degrees F.

In a large bowl, stir together the oats, cereal, and mini chocolate chips. In a separate bowl, whisk together the softened butter, vanilla, honey, peanut butter and brown sugar. Add the sticky mixture to the dry ingredients and stir well until everything is evenly coated.

Pour into a greased 8×8 square pan. Using a piece of a wax paper, press the granola bars firmly and evenly into the pan.

Bake for 18-20 minutes at 350 degrees. The granola bars are done when they start to brown around the edges. The middle will still seem soft and almost underdone, but it will set up after the granola bars cool.

Let them cool for at least 30 minutes, then using a serated knife cut into bars. To store, keep wrapped in plastic wrap and into an airtight container.
