No-Bake Cookies

It’s always hard to believe, but Christmas has come and gone again! Since I didn’t get a chance to post everything before Christmas, I’ll post some more cookies recipes this week. These cookies have been a Christmas tradition in my family for as long as I remember. The best part about them is that the only take about 15 minutes to whip up, and they require no baking! You simply drop them onto wax paper and let them cool. Traditionally, we have always made these cookies with walnuts, but you can add any sort of nut that you like, and you can also add raisins or coconut if you wish.

No-Bake Cookies
Yields: About 3 dozen cookies

2 cups sugar
3 tablespoons cocoa
1/2 cup milk
1/2 cup (1 stick) of butter
1/2 cup peanut butter
1 teaspoon vanilla
2 and 3/4 cups rolled oats
1 cup chopped walnuts

Mix the sugar, cocoa, milk and butter together in a medium saucepan. Bring to a rolling boil, then remove from the heat and stir in the peanut butter and vanilla. Stir in the quick oats and nuts.

Drop a heaping tablespoon of the mixture onto waxed paper and let cool. Store at room temperature.

    These are such yummy cookies!!! Wish my family liked them as much as I do…or maybe it’s good b/c if these were in my kitchen, I’d gobble them all!
